It’s quite late and I have a presentation in class tomorrow…I needed something to take my mind off president Bush (part of presentation) so I took some time to bake.
This bread is good! A little on the sweet side but not too overwhelming, which is good!! I found a recipe online but changed it up a bit…here’s what I did 🙂
- 1 cup cooked and mashed sweet potatoes
- ¾ cup white sugar
- ½ cup brown sugar
- ⅓ cup yogurt
- 2 tbsps vegetable oil
- 2 eggs
- 1 cup all-purpose flour
- ¾ cup whole wheat flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp ground cinnamon
- ⅓ cup water
- ½ cup raisins (you could use chopped pecans or walnuts…I just happened to have raisins)
- Combine sugar, yogurt and oil
- Add eggs then beat until smooth
- In another bowl combine flours, baking powder, salt, and cinnamon
- Stir flour mixture into egg mixture alternately with water
- Stir in sweet potatoes and raisins (or chopped nuts)
Bake at 350° degrees for 50 to 60 minutes or until golden brown.
My oven is a bit too strong so I baked mine for about 45 minutes then turned off the oven and left it inside for another 10 minutes. The bread came out golden brown.
I shouldn’t have had a piece of this bread earlier…now I don’t want to wait till tomorrow morning…I know, patience is a virtue.

I have been in the baking mode for the past few days. I’m not sure if its because I just felt like it or because I bought WAY too many bananas and could not eat them fast enough. Well it doesn’t matter. I’ve been baking and savoring all my baked goods…sorry Jillian! The 30 Day Shred although tough has not provided me with visual results yet…I guess I gotta change my diet *sigh*
After making banana bread for three consecutive days…I called it quits and decided to try something else…MUFFINS! So I got to work! I googled and googled and googled until I found a recipe that sounded so good I believed it to be the most delicious muffin EVER! Then when I went to get my ingredients, I realized I had no butter! I was VERY disappointed and went back to my laptop to start all over again.
I found this recipe for Butterless Banana Muffins and decided THESE will be the most delicious muffins ever! By this point I was tired of searching and simply decided to substitute some ingredients for the ones I had at home. The result was good! I really liked these muffins!! My mom found them a bit too sweet…but she finds most everything a bit too sweet…hehe.
2 large mashed bananas
1/2 cup white sugar
1/4 cup vanilla yogurt
1 tsp baking powder
1/2 tsp salt
1 1/2 cup all purpose flour (I also made a batch with 1 cup all purpose flour and 1/2 cup whole wheat flour)
- In a large bowl mash bananas then add vanilla yogurt.
- Beat egg until fluffy and add sugar slowly.
- Mix in egg mixture into banana mixture.
- In a separate bowl mix the dry ingredients (flours, baking powder and salt).
- Add dry ingredients to banana mixture.
Fill muffin tins with batter. Bake at 350F for about 20 minutes.
